When is comes to carrots, you want to enjoy the rainbow! Rainbow carrots not only add color, but a wide variety of nutrients. All carrots are high in fiber, potassium, vitamin C, and vitamin K, but with each color comes different antioxidants. Orange=alpha and beta-carotene which support vitamin A production which will help keep your eyes healthy. Red=lycopene which has been shown to reduce the risk of heart disease and some cancers. Yellow=lutein which has been linked to decreasing the risk of certain age-related eye diseases. Purple=anthocyanins shown to have anti-inflammatory properties and support a healthy immune system.
