Since lentils don’t require a pre-soak and are quick to cook, they are a great addition to soups, stews, casseroles. With almost 9 g of protein and 8 g of fiber per 1/2-cup cooked serving, lentils are slightly higher in protein and fiber than most beans and provided a “meatier” taste. Plus, they are high iron, folate and potassium.
