The green chile, also known as the Anaheim or New Mexico chile, is a member of the Capsicum family and is one of the most widely available chile peppers in the US. Because they have a mild, sweet flavor and much less bite than other varieties of chile peppers, they are a great addition to any dish when it needs “just a little something.” And like all peppers, they are high in vitamin C which is needed to synthesize collagen, a structural component of ligaments, tendons and blood vessels.
