The pomegranate is a traditional symbol of Christmas in Greece and is full of anthocyanins. These antioxidants have been shown to lower cholesterol levels and reduce blood clotting. Plus, eating anthocyanin-rich foods has been associated with lower concentrations of inflammatory chemicals, improved insulin sensitivity and lower blood pressure. It is always more beneficial to eat your fruit rather than drink them so that you get the high fiber benefits. Remember, you only want to eat the seeds so an easy way to extract them is to cut into quarters, place the quarters in a large bowl of water and then gently invert each quarter to push the seeds outward and into the water.
