Pumpkin is high in potassium making these shells a great recovery meal after a hard workout.

These stuffed shells are not only bursting with flavor, but also, health benefits. By adding the pumpkin, you can decrease the amount of cheese. And speaking of cheese, the use of cottage cheese amps up the protein so this meal will leave you satisfied for hours.
