I am trying to reduce fat intake in my coffee creamer & want to avoid soy. I must have cream & the pre-pack coconut & almond based creamers have stabilizers & don't create the rich creaminess. Ideas?

This is tricky because nothing is going to give you the same mouth feel, creaminess or even flavor as real cream. You could try cashew milk which tends to be creamier than other non-dairy milks. Be sure to go with unsweetend and unflavored versions to avoid added sugars. Or try 2% milk.

One thing I would ask yourself is how much are you really using? Is it half the cup or just a splash or 2? You might find that there is another place in your daily eating that you could cut back where fat is concerned so you could keep your moring cup of joe as satisying and enjoyable as it has always been.

Instead of coffee creamers sugar-free or regular can I use half-and-half and extract to flavor my coffee

What about Allman extract and your half-and-half how much sugar as half-and-half add and extract
