Peppery watercress contains vitamins K, C & B-complex, manganese & antioxidant flavonoids. Because it grows in H2O, wash it throughly & to keep fresh, store in the fridge submerged in H2O.

Watercress and fennel are topped citrus blend where the sweetness of satsuma oranges balances the tartness of the grapefruit.

Pistachios are often referred to as the "skinny" nut because they are low in fat, high in fiber, a good source of plant protein, contain fewer calories than other nuts and the act of shelling them often slows down eating. Add more to this dish to up the protein content and make it more of a meal.
