Peanut flour is made from ground peanuts with some fat removed. It comes in multiple roast with varying fat amounts. Since it's high in protein & fiber, it's a good thickener & useful in baking.

PB & J baked into the bread with some fresh sliced strawberries for added texture.

Although they are actually legumes, peanuts have more protein than any other nut. They are also rich in antioxidants and have been shown to be helpful in keeping blood sugar levels even. They may even help protect against type-2 diabetes.
