Cherry tomatoes can be hard to slice, but this trick will give perfect halves: place tomatoes on a container lid on the counter, place another lid on top & hold in place with 1 hand & slice through.

A simple balsamic vinaigrette lightly coats grilled eggplant, cherry tomatoes and fresh mozzarella cubes in this simple but flavorful salad.

Eggplant is very low in calories and high in fiber, meaning it will fill you up. In addition, it contains a significant amount of potassium, folate, magnesium, copper, manganese and niacin. **It does contain oxalates, an organic acid, that could be harmful to people with kidney or gallbladder problems.
