Beets are a great source of fiber, immune-boosting vitamin C, nerve & muscle protecting potassium and liver; and kidney and pancreas loving manganese. In addition, they are load with folate and vitamin B which help protect against birth defects. Even though beets are one of the highest sugar content vegetables, the sugar is naturally occurring and released slowly into the body.
