The health effects of coconut oil are uncertain. The claims regarding its disease prevention and GI benefits have mostly been made from research that is inconclusive or not necessarily related specifically to coconut oil. What we do know is that cocount oil is a highly saturated oil that not only raises LDL (harmful), but also HDL (beneficial) cholesterol. And there is no evidence to prove that this makes it any better or worse than any other source of saturated fat.

Since coconut oil is more than 90% saturated fat, it is recommended that you use it only in dishes that require this tropical oil. Also, it is important to note that many coconut oil products are highly processed and refined emphasizing the need for moderation.
